There are tons of recipes that you can find or even create with leftovers or extra veggies. Here’s a two healthy vegan recipes that tastes great and won’t leave you feeling hungry.

Mediterranean Chickpea Salad

For the Dressing:

  • 1 tablespoon of hummus
  • 1 tablespoon of balsamic vinegar

For the Salad (in order of layering):

  • Chopped cucumbers
  • Diced red onion
  • Chopped tomatoes
  • Chickpeas
  • Chopped olives
  • Parsley
  • Spinach

Crunchy Asian Salad

For the Dressing:

  • 1 tablespoon peanut butter
  • 1 tablespoon organic soy sauce
  • 1/2 teaspoon Sriracha hot sauce

For the Salad (in order of layering):

  • Shredded cabbage
  • Diced red bell pepper
  • Chopped broccoli florets
  • Shredded carrots
  • Shelled edamame
  • Sliced green onions
  • Romaine lettuce
  • Chopped peanuts

Layering Salad Jars:

The bottom should have all the dressing and liquid ingredients so that if the mason jar leaks it will take a bit of time. The heavy ingredients that hold up well when submerged in dressing like beans, cucumbers, onions should be next. The items that you may not want directly touching the dressing like any sort of meat, should be added after the heavy ingredients. Leafy ingredients that take up a lot of space like spinach, kale, chard, arugula should be placed. Then a just add a small amount of nuts, seeds, dried fruit, croutons, or spices.
