Recipe: Cannelloni with Salmon and Boursin Cuisine



½ c. Boursin® Cuisine Shallot & Chive
4 c. fresh spinach
2 tbsp. olive oil
1 c. cubed raw salmon
½ c. chopped smoked salmon
Pinch of cayenne pepper
8 sheets of fresh lasagna
3 c. homemade tomato sauce
2 c. grated Gruyère cheese
Salt and pepper to taste

Preheat the oven to 400° F.

In a hot pan, sauté the spinach in the olive oil for 3 minutes. Drain the spinach in a strainer.

In a large bowl, blend the Boursin® Cuisine, raw salmon, smoked salmon and spinach. Season to taste and set aside.

Spoon the salmon filling along each lasagna sheet, then roll the sheets into cannelloni tubes. Arrange in a baking dish. Spread the tomato sauce atop the cannelloni tubes, and add the grated Gruyère cheese.

Bake for 20 minutes. Serve hot. (Serves 4.)
