Fruity Summer Salad Recipes
With summer in full swing, changes in people’s eating habits have started to show: they’re eating less, and eating fresh. So instead of heavy meals with meat at the core, salads with fruit are a tasty and fresh alternative. Check out these four yummy ideas.
This is a classic and easy salad, and a refreshing option for warm summer days. Cube some watermelon in a bowl, crumble feta cheese on top, sprinkle chopped parsley, and add a drizzle of balsamic vinaigrette.
Try this: For some added protein, don’t forget the pieces of cooked chicken!
Strawberry-Blue Cheese Salad
Any green will do for this salad’s base, but nutrient-rich spinach is the best way to go. Slice two or three strawberries, crumblesome blue cheese, add a drizzle of raspberry vinaigrette, and toss.
Try this: If you like your salad to have some crunch, toast up some pecans and toss with the rest of the ingredients.
Asian-Style Tangerine Salad
Another easy salad to put together: this one uses mixed greens or arugula as a base. Chop some red onion, add approximately 10 wedges of tangerine, sprinkle some chopped peanuts, drizzle some raspberry vinaigrette, and toss.
Try this: You can get creative when it comes to the toppings. From sunflower seeds to cashews—you can even add trail mix, which can include the likes of dried fruit.
Grape and Goat Cheese Salad
This is a “white” salad that will definitely be a hit with your guests. In a bowl, chop us some romaine lettuce. Slice up some cucumber, some onion, and small chunks of goat cheese. Take a handful of green grapes, and slice each in half. Instead of vinaigrette, simply drizzle some honey on top.
Try this: For an added touch of colour, you can use both green and red grapes!
