This is the recipe for one of those "soup in a jar" gifts you can give.
I made this from the jar (it was a gift) without the tomatoes just adding extra water. It was so good that I have made it at home but used sauteed onions and mushrooms and a package of roasted garlic onion soup mix. I have added a double smoked mennonite sausage then on the second day added a couple of cups of fresh spinach leaves. It has become one of my favourites because it is fast and extremely versatile. I have even substituted sauerkraut for the cabbage as we made our own sauerkraut this fall from our abundant harvest of cabbages.
1/2 c barley
1/2 c split peas
1/2 c rice
1/2 c lentils
2 tbsp dried minced onion
2 tbsp dried parsley
2 tsp salt
1/2 tsp pepper
2 tbsp beef bouillon granules
1 tsp dried cumin
1 pkg dehydrated onion soup mix.
1 jar soup mix
3 quarts water
2 stalks celery
2 carrots, sliced
1 cup shredded cabbage
1 can (28 oz) crushed tomatoes
Combine ingredients in soup pot. Cover. Cook over med heat and simmer 1 hour until veggies are tender. |
