A French term that refers to meat, commonly beef, that is served in its own natural juices.

French for "with milk"; refers to foods and most often beverages served or prepared with milk.

To cook food in the oven.

An English term that refers to baking a pastry shell before filling it with ingredients. The shell is often lined with parchment paper and then filled with dried beans or rice that act as weights to keep the pastry from rising or blistering.

To cook food slowly over wood or charcoal fire in a pit or spit. The food is usually basted or marinated with a sauce before it's cooked to keep it moist and to add flavour.
