To tie fat, such as bacon or pork fat, around lean or game meats to prevent them from drying out while being roasted. This is usually only done when natural fat from the meat is absent.

To apply sauce, pan drippings or other liquid to food while it's being cooked so it does not dry out.

To stir a mixture rapidly in order to make it smooth.

To stir in various ingredients, such as eggs, flour and butter, into a hot liquid in order to thicken it.

To sear fish or meat that is coated with pepper or spices until it is black on the outside but remains tender on the inside.
