To cook food in a hot liquid in order to extract its flavour.

To cook food directly under the heat source.

To cook food on high heat causing the exterior to turn brown while the interior remains moist. Browning is done to give food an appetizing colour and also to enhance its flavour and texture.

To apply a liquid, usually melted butter or a glaze, to the surface of food using a pastry brush.

To cut food open down the centre, and spread the two halves to resemble the shape of a butterfly.
