1 cup all purpose flour
1/2 cup corn starch
2 tsp baking powder
1/2 cup milk
4 tbsp granulated sugar*
Pinch of salt
Oil to deep fry
Sugar with cinnamon to sprinkle over
*If you want to make a salty version, replace the granulated sugar with one teaspoon of salt and some chopped green onions. Also omit the sugar and cinnamon sprinkling.
Preheat the fryer to 350°F. In a large bowl, mix in the eggs, sugar and pinch of salt. Add the flour, corn starch, baking powder and milk mixing all the ingredients together with a wooden spoon until you get a batter similar to cake batter. Scoop a table spoon of batter and, using a second table spoon, scrape the batter off and into the fryer. Fry 6 to 7 donuts at a time until golden brown (approximately 3 to 4 minutes). Flip them only once for overall browning. Remove the donuts from the oil and drain on a plate lined with a paper towel. Sprinkle with powdered sugar with cinnamon and serve immediately.
Makes 25 donut balls.
