Ingredients:
- 1 whole chicken (about 4 pounds)
- 1 12 ounce can beer (room temperature)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes, crushed
- Juice of 1 lemon
For Rub:
- 5 tablespoons Creole seasoning
- 5 tablespoons BBQ Chicken Seasoning (Looks like a red powder)
Preparation:
Combine all rub ingredients in a small mixing bowl. Set aside.
Remove giblets and the neck from chicken. Sprinkle all over with rub, including cavity. Open can of beer and discard half of it. Place, minced garlic, thyme, lemon juice, pepper flakes and a bit of the rub in it. Make sure to pierce two more holes on the top of beer can for steaming purposes. Place chicken on top of can.
Preheat grill for a medium heat. Place chicken on grill balanced by the beer can or in a tin foil pan if you want to keep the juices to make a gravy with. Cook over indirect medium heat for 1 1/2 to 2 hours until temperature reaches 180 degrees. Remove chicken when finished and let sit for 10 minutes before serving.

What if your children are 6 and 7 and more savy? My concern is not only that they aren't getting enough nutrition but that they aren't getting enough calories. They are both very lanky boys and I would love to fatten them up a bit.
One of my children will only eat green vegetables - no other color, only apples, oranges and berries, toast, mashed potatoes, dry cereal and very small quantities of meat. His drink of choice is water, and won't eat anything sweet except plain chocolate, chocolate chip cookies and sugar cookies. And he hates all pasta. The other is pickie across the board, but hates potatoes and most meat. I've tried grinding up granola and sneeking it into their chocolate chip cookies and they can tell. I've pureed zuchini, which has almost no taste, and put it in soups and sauces, and they can tell. I give them vitamens every day, but I would love for them to just eat a full healthy meal without complaint. Any suggestions on how to add variety and calories to their meals without a fight? |

Looking For "Sneaky Veggie" Recipes! by miss_kris

|
My 1 year old has recently decided she's "anti-vegetable" - ack! A parent's worst nightmare! lol She's become a miniature food critic, and although she used to love them, even sweet potatoes are winding up on the floor these days. I need some good recipe ideas to get more nutrients into her diet - anything I can use to sneak in the veggies without her noticing! Suggestions? Anyone with toddlers have any tips?
Thanks!! K.
