Beer Can Chicken on the BBQ by faestina86

Ingredients:

  • 1 whole chicken (about 4 pounds)
  • 1 12 ounce can beer (room temperature)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes, crushed
  • Juice of 1 lemon
        For Rub:
  • 5 tablespoons Creole seasoning
  • 5 tablespoons BBQ Chicken Seasoning (Looks like a red powder)

Preparation:

Combine all rub ingredients in a small mixing bowl. Set aside.

Remove giblets and the neck from chicken. Sprinkle all over with rub, including cavity. Open can of beer and discard half of it. Place, minced garlic, thyme, lemon juice, pepper flakes and a bit of the rub in it. Make sure to pierce two more holes on the top of beer can for steaming purposes. Place chicken on top of can.

Preheat grill for a medium heat. Place chicken on grill balanced by the beer can or in a tin foil pan if you want to keep the juices to make a gravy with. Cook over indirect medium heat for 1 1/2 to 2 hours until temperature reaches 180 degrees. Remove chicken when finished and let sit for 10 minutes before serving.
